There is nothing like peaches that have been caramelizing in their own juices, then topped with what is basically the best granola ever. I could probably eat the whole tray in one sitting..!
My go-to sweetener is brown rice syrup since it’s not as taxing on the system! It’s my favorite sweetener in terms of how it makes me feel, sweet and loyal! It brings the blood sugar up, without sending it crashing down. It’s made from brown rice cooked with special enzymes until it breaks down into a liquid. Because it’s made up of more complex carbs, brown rice syrup delivers a mellow, gentle, yet sweet taste.
Makes 2 to 4 servings
Ingredients
- 2 peaches, cut into roughly 1” cubes (as best you can)
- 1.5 tablespoons brown rice syrup
- .5 cup rolled oats
- .25 cup almonds, chopped
- .25 cup walnuts, chopped
- 1 tablespoon black sesame seeds
- .25 cup raisins
Preheat the oven to 350°F
Arrange the peaches in a small baking dish. Set aside.
Add the syrup to a small saucepan with 1/2 to 2/3 cup water and bring to a boil. Add the oats.
Stir and cook for about 1 minute, or until well combined and the water is absorbed. Add the nuts, seeds, and raisins and stir to combine. Pour over the peaches and bake for 35 to 40 minutes, until slightly browned and bubbling.
Serve warm!
