Easy roasted pumpkin great for a side dish!
Prep Time: 10 minutes | Cook Time: 36 minutes | Yields: 4 servings
1 small pumpkin roasted
1 handful fresh sage
1 tbsp extra virgin olive oil (evoo)
2 tsp kosher salt
1 tsp pepper
Preheat oven to 400 degrees
Cut small pumpkin in half scrape out seeds and drizzle evoo over pumpkin, season with 3/4 tsp salt and 1/2 tsp pepper
Place cut side down on baking sheet
Roast until tender not soft about 30 mins, remove from oven
Turn oven to broil
After pumpkin cools a bit cut into wedges; poke fresh sage into flesh.
Drizzle with a little more evoo, return to oven to broil for about 6 minutes until sizzling and sage is crisped.
