I’m not kidding! I just can’t get over how delicious home cooked fresh simple warm rice is with seeds – seriously yum! Whip up a delicious batch of your favorite brown rice (medium or short grain) and then toast some sunflower seeds.
Recipe
Use 1 cup short or medium grain brown rice, soaked in water overnight if possible.
Remove the water and place the rice in a pot, adding 2 cups of fresh water and a pinch of sea salt or kombu.
Bring it to a boil over high heat, then cover.
Simmer the rice for 50 minutes then turn off the heat and let it sit for a few minutes longer with the lid on.
After the rice sits, remove it from the pot and place it in bowl or container to prevent it from getting super moist and less fluffy. If cooked just right…brown rice, warm and topped with toasted sunflower seeds is so yum!
For some more goodness, use ½ cup medium or short grain rice, ½ cup sweet rice and ¼ rye or wheat berries or barley. You could even double those portions and have a delicious easy go to for a few days.
If you want to make it into a more complete meal, add some steamed kale, sauerkraut, or drizzled tahini. But sometimes it’s nice just to go to town on the rice and seeds!! It’s a simple nourishing meal that will keep you happy and calm, and is a great restart if you’ve been feeling a bit unhealthy lately.
