This is a much healthier “French toast” you can have as a breakfast, snack or dessert.
Ingredients:
1 package of raisin-cinnamon flavored mochi (Grainaissance makes a nice version), cut into 1” x 2” pieces
1-2 tsp sesame or olive oil
Brown rice syrup (about 1 Tbsp per serving). The maple-flavored brown rice syrup is even better for this, but the regular kind is good too.
Directions:
Put the oil in a cast-iron or stainless steel frying pan over low heat. Place the mochi pieces into the pan, making sure they don’t touch. Cover and cook for about 3-4 minutes. Flip the mochi, cover, and cook for another 3-4 minutes. It’s done when the mochi puffs up or softens.
Serve the pieces onto a plate, then top with brown rice syrup. If you want to get really fancy, you can use Suzanne’s Maple Brown Rice Syrup. Delicious!
