chocolate peanut butter cups

This is the first recipe you have to try! If you think that vegan recipes can't be amazing, this will prove you wrong. They are insane! Before I went veggie, I was a major Reese's Peanut Butter Cup addict. I was so sad when I thought I would have to give them up forever. Regular Reese's Peanut Butter Cups are obviously not great for you, but these veg ones aren't nearly as bad. If you are looking to lose weight, or you are a superhero, don't have these every day....but having them every once in awhile will make you soooo happy. Not concerned about weight?! Enjoy these a few days a week. If you are a flirt or a full-on vegan, go nuts! Let them replace your naughty desserts. Bottom line is, make them....try them. I dare you not to love them!

MAKES 12

INGREDIENTS
1â?„2 cup Earth Balance butter
3â?„4 cup crunchy peanut butter
(preferably unsweetened and unsalted)
3â?„4 cup graham cracker crumbs or 10 graham cracker squares
1â?„4 cup maple sugar or other granulated sweetener
1 cup grain-sweetened, nondairy chocolate or carob chips
1â?„4 cup soy, rice, or nut milk
1â?„4 cup chopped pecans, almonds, or peanuts

STEPS
Line a 12-cup muffin tin with paper liners. (If You Care makes unbleached liners made from recycled paper.)
Set aside.
Melt the butter in a small saucepan over medium heat.
Stir in the peanut butter, graham cracker crumbs, and maple sugar and mix well. Remove the mixture from the heat.
Evenly divide the mixture, approximately 2 tablespoons per cup, among the muffin cups.
Combine the chocolate and milk in another pan.
Stir over medium heat until the chocolate has melted.
Spoon the chocolate evenly over the peanut butter mixture.
Top with chopped nuts.
Place in the refrigerator to set for at least 2 hours before serving.

They are great soft, but even better a little firmer!

    I made 3 batches of these for a New Year's Eve party this year, and they were a huge hit.


    I had no trouble finding grahams without honey at Central Market. They said Honey Grahams, but looking at the label, they had no honey in them. I couldn't find maple sugar, so I used turbinado. This wasn't the best option because it didn't dissolve in a timely fashion. I also had to adjust the graham cracker crumbs up because the Central Market all natural peanut butter that I used for the first 2 batches was a bit thinner than the other brand. I considered just tripling the recipe instead of doing it 3 times, but it really was easy allowed me to adjust along the way.


    The serving is huge. I think next time I will either put 1tb of peanut mix in the cups and spread the recipe out over 24 cups (this would require doubling the chocolate) or getting mini cups and doing that.

    I have been superhero vegan for two years. I have resisted the peanut butter cups until now - I made them. Quick - send somebody over to take them away. They are delicious and now I have fallen off the wagon. Say sugar anyone? My advise - make them, have one and give the rest to your neighbors.

    Has anyone doubled the recipe or even tripled it for a large party or should each batch be made individually? I haven't tried these yet because I have to get all the GF ingredients first, but I can't wait! They sound (and look) absolutely delicious!

    i bought gluten free corn flakes and crushed them. i've made them with graham cracker as well, and i think the texture of the corn flakes were actually better. give them a try and see whatcha think:)

    I had trouble finding honey free graham crackers too, so I substituted vegan animal crackers (Whole Foods 365 brand). Everyone loves them and I have made this recipe at least 6 times. For a fancier Thanksgiving twist, I added shredded coconut to the peanut butter mixture! YUM!

    Thanks for that suggestion. I had bought the Whole Foods honey graham crackers. I looked in the cookies for an alternative. Too bad I didn't think like you! Great idea. I want to make them again.

    Esperanza - I might have had to use two, I can't remember now. So if you decide to use them, take a look at the oz.


    Thanks for that, Stephanie. I haven't seen those in a while, I did even go to conventional grocery stores which I don't usually do, but they only had the honey ones. I like the Wholly Wholesome because the ingredients are cleaner, but I see now that they have palm oil, but Nabisco has soy oil and high fructose corn syrup. I guess I have to choose the lesser of two evils if I choose to make them again (and could find Nabisco ones) and I'm not sure which one that is!

    Nabisco Graham Crackers are vegan! You should be able to find them in most grocery stores. They are in a red box :)

    Esperanza - I couldn't find any without honey, either. I used to eat them as a kid, I don't know where they've gone! I used a graham pie shell made by Wholly Wholesome, which I found at Whole Foods on the baking aisle. It's vegan. I used one whole shell.

    How did you all find these without honey??? I was pretty devestated I had to make mine with honey graham crackers, so guess they're not vegan :( :(


    Also, Alicia, what do you mean by 10 squares? Is it 10 of the tiny or 10 of the full ones with two each?

    These are devine!! I just made them yesterday and I better only make them when people are over to share them with me. Otherwise, I will eat them all myself. I like these better than the real ones. Thanks for the recipe!! I just bought your book and can't wait to make more of your recipes.

    Landree -- your comment cracks me up! I took these to a neighborhood party to prove how awesome vegan can be, and it did the trick. Even the biggest, most meat-eating men raved about them. I used raw organic sugar (the large grains) that didn't melt all the way, so there was a satisfying crunch. Also, I used no nuts on top because of allergies in the neighborhood -- my son to tree nuts, another boy peanuts. I warned him not to eat the peanut butter cups, but I also had to worry about the boys breathing the nuts, which can also cause anaphlaxis. The luscious layer of dark chocolate prevented this. http://midlifevegan.blogspot.com

    love these. however, whenever i make them, i always find that my chocolate doesn't reach the edges of the cups even if i melt more than it says to in the recipe. they're still super delicious though!

    I made the chocolate peanut butter cups. They were simple and turned out amazing. I usually have a hard time eating only 1 or 2 sweets. Even though these were incredible it was easy to just eat 1. How cool is that!!!! My husband, the hunter, loved them too. He thinks he might be willing to try all of her recipes, except the greens (more for me that way).
