According to EcoSalon, the marriage of sweet potato and nutritional yeast works great in this recipe. Sounds like a nice option for those of you who prefer not to eat soy.

Sweet Potato Mac & Cheese
Ingredients
- 1 cup of cooked noodles (according to package instructions)
- 1/2 baked sweet potato
- 1/4 tsp mustard
- Juice of half a lemon
- 1 tbsp nutritional yeast
- 1 tbsp extra virgin olive oil
- 1/4 tsp garlic powder
- Dash of salt
- Dash of freshly ground pepper
- 1 tbsp of nutritional yeast and 1/2 tbsp of olive oil for crust

This was a complete failure!!! I followed this recipe exactly and it smelled and tasted awful. The nutritional yeast overpowered all the other ingredients. I will continue searching for a vegan Mac and cheese. It's definitely not this recipe. -
My good friend showed this recipe to me - its vegan,and can be gluten free. Oh and is incredibly delicious! More creamy than you might expect
Squasharoni! (from the Kripaulu cookbook)
Serves ~4 (but really, as many as you like.. very flexible !)
12oz elbow pasta
olive oil to saute
1 1/2 cups chopped onions
5 cups (approx 1 large) butternut squash
1 Tbsp salt (divided)
1/3 cup tahini
1Tbsp miso
1 Tbsp Umeboshi vinegar
1 tsp tamari (which for gf is Braggs soy sauce)
1/3 cup chopped walnuts
1/2 Tbsp dried parsely
1/2 Tbsp dried oregano
3/4 cup breadcrumbs (glutino sells them, or keep the crusts of gf loafs and make your own)
Roast squash
Cook pasta until tender
Saute onions until translucent
In a bowl, mix tahini, braggs, miso, vinegar, salt
Mix tahini mixture with squash and herbs
Put noodles back in the pot with a little oil
Mix all together and put in two casseroles
Top with walnuts and breadcrumbs
Bake at 375 degrees for 20 minutes, uncovered. -
This sounds really interesting. I would never have thought to use yams, but I do love them, and I will try some sort of variation of this.
Here is a soy free, vegan and gluten-free Mac and Cheese recipe that my 2 year old and I love, plus the "cheese" is raw-vegan and can be used for a raw version of mac n' cheese too:

@Stef. An easy substitute for "nutritional yeast" is coarsely ground pinenuts. I got the tip from a website but I forgot which one, maybe www.vegetariantimes.com but I'm not 100% sure. It works anyway. Enjoy!!! -
Interesting...I make it more like your alternative recipe. I mean common what are most people that eat mac and cheese used to? Cheese powder, milk, butter and cooked noodles. All you need to do is substitute the nutritional yeast for the powder, almond milk or a low sweetened alternative milk for the cow milk, and Earth Balance for the butter. Mix the same as you would from the box. And if you need a wee bit of yellow color add some turmeric and it looks exactly the same. And for a treat throw in a hand full of cheddar Daiya shreds! -
Just made this for supper! YUM! I am ALWAYS looking for some good vegan mac n cheese recipes that don't just rely on soy cheese or other cheese subs, so this was very exciting! A couple of disclaimers:
-I quadrupled the recipe. The recipe is only for one serving and I wanted enough for my husband and me, and leftovers.
-I would use less lemon juice next time. It gave it almost a citrusy taste, which was unexpected. Not bad, just unexpected. When making the recipe, I expected the sweetness of the potato to come through more, but it didn't.
-Lastly, I only used maybe a half a teaspoon for FOUR SERVINGS (it calls for 1 tablespoon for 1 serving!!). Much healthier option, and all of that oil is definitely not needed for the taste!
This was a super easy recipe to make, and we will definitely make it again!! -
What's a easy alternative for nutritional yeast I want to make this tonight and where I live no one has even heard of it :(. I will be ordering it from now on but need something now!!! Thank you! -
