chocolate peanut butter cups

This is the first recipe you have to try! If you think that vegan recipes can't be amazing, this will prove you wrong. They are insane! Before I went veggie, I was a major Reese's Peanut Butter Cup addict. I was so sad when I thought I would have to give them up forever. Regular Reese's Peanut Butter Cups are obviously not great for you, but these veg ones aren't nearly as bad. If you are looking to lose weight, or you are a superhero, don't have these every day....but having them every once in awhile will make you soooo happy. Not concerned about weight?! Enjoy these a few days a week. If you are a flirt or a full-on vegan, go nuts! Let them replace your naughty desserts. Bottom line is, make them....try them. I dare you not to love them!

Ingredients

  • 1/2 cup Earth Balance butter
  • 3/4 cup crunchy peanut butter (preferably unsweetened and unsalted)
  • 3/4 cup graham cracker crumbs or 10 graham cracker squares
  • 1/4 cup maple sugar or other granulated sweetener
  • 1 cup grain-sweetened, nondairy chocolate or carob chips
  • 1/4 cup soy, rice, or nut milk
  • 1/4 cup chopped pecans, almonds, or peanuts

Directions

  1. Line a 12-cup muffin tin with paper liners. (If You Care makes unbleached liners made from recycled paper.)
  2. Set aside.
  3. Melt the butter in a small saucepan over medium heat.
  4. Stir in the peanut butter, graham cracker crumbs, and maple sugar and mix well.
  5. Remove the mixture from the heat.
  6. Evenly divide the mixture, approximately 2 tablespoons per cup, among the muffin cups.
  7. Combine the chocolate and milk in another pan.
  8. Stir over medium heat until the chocolate has melted.
  9. Spoon the chocolate evenly over the peanut butter mixture.
  10. Top with chopped nuts.
  11. Place in the refrigerator to set for at least 2 hours before serving.
  12. They are great soft, but even better a little firmer!

    I made these for my mom as a Mother's Day dessert. She loved them! Like you, I love the Reese's. These were better!

    This recipe should come with a warning!!
    They are SO amazing, they disappeared in just a few days! I am only allowed to make these for company or to bring to someone's house because they are dangerously delicious!!!

    They are by far the best dessert that I've had and I think my man would say the same. "The Kind Diet" is my favorite book, cook book and my go to info site. Thank you Alicia for all your good work you do towards all of us, our amazing animals that we share our planet with and our beautiful Environment! I have learned so much from you so thank you again. I was also wondering if I could post your caersar salad dressing on my facebook page (https://www.facebook.com/vegheadvegetarian) , it is "our go to" dressing at home. It's mike's favorite, he doesn't buy any dressing for the store, its always yours. He has come up with different types of salads using your dressing...I love it!

    These are so delicious and so naughty tasting. Peanut butter cups are what I have missed the most (candy-wise) since going vegan. These are perfect.

    OMG!!!I fixed these twice in 4 days..the first time i made them and shared them with my girlfriend..couldnt get my husband to try them...the next time i made them JUST 4 ME!! He still refuses to taste them...I just love them!! they are absolutely the best..it took me so long to make them because i could never find vegan chocolate..however they just opened up a new Whole Foods store and OMG!! that store is only part of what i imagine Heaven to be like!! It has so many vegan products!! I have to be careful making these though, cause if i make them around that time of the month i will overindulge..but right now i'm pacing myself at one or two a day..Thanks Alicia!!

    This time when I made these delightful little treats, I ground Mesa Sunrise cornflakes in my spice grinder instead of using graham cracker crumbs. Super yum!

    I made these this week and they are awesome! I didn't have graham crackers so I stirred in brown rice cereal and it gave it a great crunch!

    These are amazing. I cannot rave enough about them. The only problem being that I couldn't transport them to work. So easy to make and so delicious. You only feel like one or two at a time but that is enough to indulge a chocolate and salt craving.

    OMG. These are the best, best, best! I am based in Australia - no graham crackers here, so used Arnott's Nice biscuits instead. Also, couldn't find dairy free choc chips so just used Green & Blacks 85% dark choc and just broke it into pieces - worked like a charm! Thank you Alicia!

    Oh my goodness! My 3 yr old son and I made these last night for dessert. I am a newcomer to the vegan lifestyle (Day 15). This absolutely without a doubt the best peanut butter cup I have ever put in my mouth, you would never know that it is vegan. I have to say, I really didn't measure anything - I just did it by eye, and I used Sugar in the raw, coconut milk, and smart balance light with flax instead because that is what we had. Still absolutely AMAZING- I will be bringing these to many parties I can already tell. :) Thanks for the wonderful recipe.

    I made this last night, and they are amazing. So easy too! I used dark chocolate, there was only one kind of chocolate without dairy at the store near my house. I had one for deseart, had the Lentil Stew for dinner, also very yummy.

    New Zealand doesn't have a lot of the fancy stuff America does, so I make these with Olivani spread (which I was using as a replacement for butter years before I was vegan because it's so much better!), Arnott's Nice biscuits, unrefined raw cane sugar and soy flour based choc chips. I thought it would be too soy tasting with the milk and the chocolate, but it really wasn't! I used smooth and crunchy peanut butter because some of my biscuits were a bit chunky (crushed by hand haha) and they were really, really amazing. My fiance and I fought over them, I took them to work and they disappeared faster than forked lightning. I told everyone afterwards that they'd been made with soy and vegan ingredients, and people who normally would've flagged them didn't care because they were so good! These could take over the world.

    I've made these like 5 times since buying the book, they totally satisfy my sweet craving! Made them today using half the earth balance called for in the recipe and a bit more graham cracker crumbs and they set up great after a short time in the freezer! Took them to a party and no one even believed me that they were vegan because they seem so indulgent! Thanks Alicia!

    Can't even tell you how many of these we have made. :) Everyone in my immediate as well as extended family adore these..We used to bring very cool and hip side dishes to BBQ's and Dinners, but now all anyone ever asks for are these! Thanks!

    I had trouble finding honey free graham crackers too, so I substituted vegan animal crackers (Whole Foods 365 brand). Everyone loves them and I have made this recipe at least 6 times. For a fancier Thanksgiving twist, I added shredded coconut to the peanut butter mixture! YUM!
