Yummy Gingerbread cookies!

These cookies are super easy to make and they are super delicious. They are perfect for the holiday season!

Ingredients

  • 1 1/2 cups whole wheat pastry flour
  • 1 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons dry ground ginger
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 3/4 cup maple syrup
  • 1/2 cup safflower oil
  • 1/4 cup molasses

Directions

  1. Preheat the oven to 375 degrees
  2. Combine the flours, baking soda, baking powder, ginger, pumpkin pie spice, and salt in a large mixing bowl
  3. In a separate bowl whisk together the syrup, oil, and molasses. Add wet to dry and combine.
  4. Roll out dough to desired thickness between two sheets of parchment paper and cut dough with a cute Christmas cookie cutter! (or any cookie cutter you chose)
  5. Place cookies on prepared baking sheets and bake for only 10 minutes!
  6. Enjoy!

    These are amazing! My first attempt at vegan baking during the holidays and these are definitely going to be my go-to! I'm afraid I may eat the whole batch myself - stack up against whole foods ginger cookies which I can never stay away from, in fact, they are actually better!

    Hey All,

    Melanie Waxman's wonderful macro site: celebrate4health introduced me to using unrefined organic coconut oil in my baking and I really like the change from more stronger tasting oils to coconut oil. She has 6 or 7 children and lovely tips on being a loving mum and wonderful recipes too.

    So, I have made these cookies and we all loved them!
