BBQ Seitan

Ingredients

  • package prepared seitan 1 na
  • yellow onion 1 na
  • beefsteak tomato 1 na
  • leaves of lettuce (romaine or butterhead) 2 na
  • whole wheat pitas 2 na
  • veganaise 4 tbsp
  • BBQ sauce
  • we like Annie's 4 cup
  • olive oil 2 tbsp

Directions

  1. Dice the onions and cut the tomatoes into ½ inch slices
  2. Sauté onions in olive oil over medium heat until soft
  3. about 3-5 minutes
  4. Add seitan and cook until just barely golden brown
  5. about 3-5 minutes
  6. stirring frequently
  7. Add barbeque sauce
  8. and stir well
  9. Reduce heat and allow to simmer until sauce has cooked down
  10. about 15-25 more minutes
  11. Remove the mixture from the heat and let cool for one minute
  12. Cut each pita in half and spread veganaise on the inside of the pitas
  13. Place the lettuce and tomatoes inside the pitas before spooning in the seitan
  14. Serve and enjoy!
