Cuban-Style Roasted Sweet Potatoes

When you make my Cuban Sweet Potatoes recipe, use the lighter colored sweet potatoes and not the orange ones – though the orange ones are pretty for holidays. I think the white ones give a better flavor to this recipe, though!

  • large sweet potatoes
  • peeled and quartered (about 3 lbs) 3 na
  • extra-virgin olive oil 4 tbsp
  • Fine sea salt to taste 1 na
  • Freshly ground black pepper to taste 1 na
  • large garlic clove
  • minced 1 na
  • fresh lime juice 1 tbsp
  • chopped fresh parsley 1.5 tbsp


  1. Heat the oven to 400
  2. Line a baking sheet with parchment paper and set aside.
  3. Place the sweet potatoes in a medium bowl
  4. Toss with 2 T of the oil and season to taste with salt and pepper
  5. Spread the potatoes on the prepared baking sheet
  6. Roast until they can be easily pierced with a knife but still offer some resistance
  7. about 30 minutes
  8. Let cool for 15 minutes or so
  9. Transfer the potatoes to a large bowl
  10. Toss with garlic
  11. lime juice
  12. parsley
  13. and remaining 2 T of oil
  14. Adjust the seasoning to taste with salt and pepper
  15. Serve warm or at room temperature

    This is one of my go to recipes, I LOVE it, make it regularly, many friends have loved it too and now also make these fantastic, flavoured balanced roasted gems; perfect for so many diets, eating restrictions, etc. … I only use the ‘Caribbean’ sweet potatoes, red skin, white-ish flesh, a bit less sweet but taste more authentic… TY Alicia! <3
