Low Fat Nacho Cheese

The best vegan nacho cheese on the planet, I swear. (Recipe from happyherbivore.com)

Ingredients

  • 1/4 cup cashews
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon granulated onion powder
  • 1/2 teaspoon salt (optional)
  • 2/3 cup nondairy milk (any)
  • 2 teaspoons miso paste (yellow)
  • 1/2 teaspoon lemon juice
  • 2 teaspoons arrowroot (or cornstarch)
  • 1/4 cup roasted red bell pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1 pinch cayenne powder (optional)

Directions

  1. Combine all ingredients in a food processor and process until smooth and creamy.
  2. Transfer to a saucepan and cook over medium heat, stirring occassionally and allowing the cheese to thicken.
