Greek Salad with "Feta" Cheese

All the taste of a Greek salad...without the dairy! (recipe from happyherbivore.com)

Ingredients

  • 1 pound extra-firm tofu
  • 2 tablespoons water
  • 4 teaspoons miso paste (yellow)
  • 1/4 cup red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon fine salt
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon dried rosemary
  • 2 tablespoons nutritional yeast

Directions

  1. Break tofu apart into a few large pieces in a mixing bowl and set aside.
  2. Whisk all remaining ingredients, except nutritional yeast together.
  3. Pour over tofu and mix with your hands, crumbing the tofu into smaller pieces as you go.
  4. Set aside and let rest for 10 minutes or overnight.
  5. Sprinkle 1 tbsp of nutritional yeast over top and mix. Taste, adding more nutritional yeast if desired.
  6. For best results, freeze tofu first, then let it thaw.
