Pav Bhaji

From the streets of Mumbai to classy hotels, this dish has travelled a long way. Everyone loves pav bhaji, and there's no reason why you shouldn't try it.

Ingredients

  • 1 capsicum chopped fine
  • 1 onions chopped fine
  • 2 tomatoes chopped fine
  • 2 1/2 cups chopped mixed vegetables (beans, carrots, cauliflower, potota, beans, bottle gourds, etc.)
  • 1/2 cup shelled peas
  • 2 tablespoons oil
  • 1/2 teaspoon turmeric powder
  • 1 1/2 teaspoons Red chilli powder
  • 1 teaspoon salt (or to taste)
  • 1 cup water (for boiling vegetables)
  • 1 teaspoon ginger grated,
  • 1/2 teaspoon lemon juice
  • 1 tablespoon coriander chopped
  • 1 chopped green chilly (optional)
  • 8 squarish soft buns about 4" x 5" size
  • 1 tablespoon oil to fry buns

Directions

  1. Pressure cook mixed vegetables and peas till well done in 1 cup of water, adding 1/2 teaspoon of salt.
  2. Mash them coarsely after draining.
  3. Heat Oil in a Pan
  4. Add ginger, capsicum, onion, Green chillies and tomatoes.
  5. Fry for 2-3 minutes till very soft.
  6. Add chilly powder, turmeric, 1/2 teaspoon salt , and fry further 2-3 minutes.
  7. Mix boiled vegetables in it,
  8. Simmer till gravy is thick, stirring and mashing pieces in between.
  9. Add lemon juice, stir. Garnish with chopped coriander
  10. For Buns: Slit buns horizontally leaving one edge attached. (To open like a book).And roast open on a griddle till hot and soft with the surface crisp on both sides.
  11. Serve hot with bhaji, a piece of lemon and chopped onion
