sammi's tempeh enchiladas

I found another recipe from Kind Lifer Sammi Mclean's blog, Vegan Pandamonium, that looks great. Sammi posted this version of 'Tempeh Enchiladas' on her blog... I can't wait to try them! Sammi wrote, "This recipe was shared with me a long time ago by one of my bffl's, Lindsey Mills. I have made it numerous times since and it is seriously soooooo good. It's nice and mildly spicy, not to mention suuuuper hardy and filling!"

Ingredients

  • 1 package of tempeh
  • 1 can diced tomatoes with green chiles, drained
  • 1 packet taco seasoning
  • 1/2 onion, diced
  • 2 garlic cloves, minced
  • 1 can of beans of your choice (Sammi used vegetarian refried beans)
  • 5 Flour tortillas
  • 1 or 2 shakes of nutritional yeast to garnish (optional)
  • 1 jar of your favorite tomato sauce

Directions

  1. Preheat your oven to 350 degrees F.
  2. In a large sauté pan, sauté the onion and garlic with a little olive oil until fragrant and translucent.

  3. Add the can of tomatoes and crumble in the tempeh.

  4. Mix in the taco seasoning and let it all incorporate for about 5-10 minutes.

  5. In a separate sauce pan, let your beans heat up.

  6. Once the beans are hot and the tempeh mixture is settled, start assembling your tortillas.

  7. Spread out the beans first on the tortilla, and then add the tempeh mixture on top.

  8. Roll it up, and place in a casserole dish.

  9. Repeat (Sammi made 5 enchiladas in one casserole dish).
  10. Pour the tomato sauce over the enchiladas (you don't need the whole jar, just enough to cover them evenly)

  11. Put the dish in the oven for about 15-20 minutes.


  12. Sammi also said that if you want to go wild, try adding some vegan cheese and/or sour cream on top.

    SO yummy! I made them today and just finished eating them. My boyfriend also says they are yummy! GREAT recipe! Next time, I'm going to make it with enchilada sauce. YUM!
