my favorite homemade french toast

This French Toast recipe is hands down the best one I have ever made. It's pretty darn superhero, meaning you could have it once a week and still maintain full superhero status. If you aren't trying to lose weight, you could have it twice a week, and if you are a flirt, have it every other day if you want!!! It's sooooo good.

Ingredients

  • 1 1/2 cups firm tofu
  • 2 Yeast-free bread slices (French Meadow Summer Bread or whole spelt bread are good options)
  • 1 1/2 teaspoons cinnamon
  • 2 tablespoons rice syrup
  • 1/2 cup soy milk
  • 1/2 teaspoon sea salt
  • 1 tablespoon corn oil
  • 1 teaspoon vanilla
  • 1 teaspoon or 2 splashes of Oil of your choice (olive, safflower, sunflower, etc.) for frying

Directions

  1. Blend all ingredients together until smooth and creamy.
  2. If too thick, add more soy milk. 

  3. Dip bread in batter and fry in hot oiled skillet until browned on both sides. 


  4. Topping: Serve with maple syrup.
  5. Or you can make a great cinnamon butter by mixing cinnamon together with Earth Balance to taste.
  6. You can also make a maple/flax syrup by mixing 1/2 cup maple syrup and 2 teaspoons flax seed oil (that kind of ratio, because you don't want to make more syrup/flax than you will use)
  7. Mix them together well. The oil adds a nice layer to the syrup.

    This looks great and I would love to try the recipe but am concerned about the use of "corn oil".
    Doesn't corn oil have GMO's.
    Could I substitute an organic vegetable oil?

    I made these this morning for my husband who HATES most of the food I cook these days. He loved it. I think that says it all. If my non-vegan/anti-vegan food husband liked it, then it's good!

    I just tried this and it was much better than the banana version I had tried last time. The banana version was too difficult to cook. It either burned or was mucky. This Kind Life recipe cooked much like lacto-ovo french toast, and had the same texture.

    I doubled the ingredients and used a whole cube of tofu which turned out to be way way too much, but i have leftovers! :) Half a cube of tofu is just about 1 1/2 cups. You could probably get 8 slices out of that, and I couldn't find yeast free bread and it turned out perfect!

    This is seriously the best french toast I have ever had. I am in love. haha

    My boyfriend (who recently stopped eating meat, and when I say recently, I mean like last week :) ) was so in love with it too and he used to be so picky. He started singing, 'we are the champions' when he started eating it.

    Says it serves 1 but I found out it really serves 4.First time I made this for my husband & myself there was a lot of batter leftover. The second time I halved all the amounts & was still able to make two pieces for each of us (total of four pieces) with very little of the mixture left.
    This is a really, really delicious recipe....our favorite Sunday breakfast along w/tempeh bacon & fruit salad.

    Love this recipe. I made a few subs with what I had/didnt have and it still turned out fab!

    I subed plain tofu for one marinated in basil and corn oil for sunflower oil. I also omited the rice syrup.

    Very simple recipe. Enjoy!
