This recipe is sooo yummy when you have a major sweet tooth. One is almost not enough though...I kept going back for more!!! Bad girl!! lol. Go to my Fluffy Raspberry Frosting Recipe to top them off with. :)

Ingredients

  • 1 1/2 cups flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup canola oil
  • 2/3 cup sugar
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest

Directions

  1. * in a small bowl mix flour, baking powder, baking soda and salt together until well blended with a spoon. * In a large bowl whisk together the oil and sugar first; then add the rest of the wet ingredients and whisk. * add dry ingredients into wet ingredients and beat or whisk until fluffy. * fill each muffin tin 2/3 full and bake for 18 to 20 min at 350 degrees. When they are done. Let them sit out to cool down. Make the icing and put in the fridge while they cool.
