Healthy Rice and beans

This recipe is so simple, and tastes great. Adding carrots and peas pumps of the veggies and adds a nice twist.

Ingredients

  • 3 tablespoons Olive oil
  • 1 small onion, chopped
  • 1 cup brown rice
  • 1 1/2 cups vegtable broth
  • 1/2 cup water
  • 1/2 cup salsa, I used Pico De Gallo
  • 2 carrots, finely chopped, I pulsed them in the food processor a few times
  • 2/3 cup frozen peas
  • 1 can adzuki beans, drained and rinsed
  • 1 hot sauce to taste
  • 1 salt and pepper to taste

Directions

  1. Heat oil in a medium pot with lid. Add onion and sauté until soft. Add rice, broth, water, and salsa. Stir well. Bring to a boil, reduce heat and cover. Simmer for about 35 minutes. Add carrots, beans, peas, hot sauce, salt, and pepper. Stir well and cover. Cook for 5-8 more minutes. Serve with extra hot sauce, tomatoes, and jalapeños. Enjoy!
