LouLou's Amazing breakfast pancakes

Light fluffy and EASY TO MAKE. Delicious with maple syrup & vegan sausage patties or; Mixed warm berries (warmed through in a pan...I don't add sugar, but if they need sweetening, a little rice or maple syrup).....pile on top of pancakes - YUM! This makes 4 nice sized pancakes, based on using a soup ladle to portion out the batter.....serves 2 (2 pancakes each)

Ingredients

  • 1 cup all purpose flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons sugar (depending on your taste)
  • 1 cup non dairy milk (I use Almond)
  • 1 egg-repacer (I use Redmill)
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla essence

Directions

  1. In a large bowl combine the dry ingredients
  2. In a smaller bowl combine the wet ingredients
  3. Add the wet ingredients to the dry ingredients
  4. Mix well into a smooth batter
  5. Pre heat a small pancake pan (I spray a little canola oil on too)
  6. Use a soup ladle to drop batter onto pan
  7. When surface of batter begins to bubble - FLIP!
  8. Cook other side for anoter 30 seconds or so & SERVE HOT!

    these are delicious!! tried every recipe from every cookbook and online searches - with coconut, bananas, you name it, but these are the only ones to come close to the pancakes mom used to make. excellent recipe. bonus - this recipe doesn't make 12 pancakes that you'll never eat, perfect for two!
