When I get a craving for something chocolatey .... this does the trick & its really quick & easy to make. I get my carob in bulk from my local Farm to Market. The portion of cornflakes is not exact, just keep adding until you get them coated with carob, to your preference...I prefer a really thin coating...my other half likes it to be really thick! For each cup of carob you use, add 1 Tbsp of oil, or the carob will burn when you heat it.

Ingredients

  • 1 cup carob chips
  • 1 tablespoon canola oil
  • 4 cups organic cornflakes

Directions

  1. In a large heat proof bowl, mix carob chips with oil
  2. Ensure the carob chips are lightly coated with the oil
  3. Either over a bain marie (or cheat in the microwave like I do.... but Alicia doesn
  4. If you do use the microwave, do this in 1 minute increments, mixing in between with a wooden spoon to evenly melt the carob
  5. Once melted, quickly stir in cornflakes & ensure they are all evenly coated with melted carob
  6. I prefer mine to be barely coated, so its not too sweet... but enough to stick together when cooled
  7. Either, spoon into paper cup-cake sized baking cups or spread over grease proof paper on a baking tray
  8. Chill in the fridge until set (about 20 mins or so)
  9. EAT & ENJOY!
