LouLou's Vegan Layered Salad

I made up this salad based on a memory of a shop bought salad I used to be addicted to from a British store called Marks & Spencers... this is my vegan version of it. I really like to use Trader Joe's Broccoli Slaw Mix in this. The quantities are not meant to be exact, as I use whatever I have available & just layer it. The cheesy-mayo mix is also a great sandwich filler. Adjust the quantity of vegan cheese & mayo according to your personal preference

Ingredients

  • 1 bag of slaw mix or shredded cabbage
  • 1 bag shredded mixed salad leaves
  • 2 or more grated carrots
  • 3 or 4 spring onions, finely sliced
  • 2 cups cooked & cooled sweetcorn
  • 1 cup or 2 cups shredded vegan cheese
  • 1 cup approx of veganaise
  • 1 14oz tin of small white beans, drained & rinsed
  • 1 quart fresh black pepper (to taste)

Directions

  1. Mix together the grated vegan Cheddar, with the veganaise, the spring onion and season with the black pepper
  2. In a large bowl (with a flat base if possible), place a layer of shredded salad leaves
  3. Now a layer of sweetcorn
  4. Add a layer of the shredded slaw or cabbage and the grated carrots
  5. Now a layer of the white beans
  6. Spread over a layer of the cheesy-mayo mix, it doesnt need to be perfect
  7. Repeat the layers, ending with the cheesy-mayo mix on top
  8. Serve, making sure you dig down to get a layer of everything on your plate
  9. When it all lands on the plate, it ends up in a big, delicious, mixed up mess!
