Vegan Burgers with a side of Greens

This recipe is made with fresh ingredients. I used the sweet potato recipe in the Kind Life book, sliced them thinner and cooked until softer and used in this recipe. The great thing about this recipe is that you can change the ingredients by your taste. Add mushrooms, peppers etc. It took about 30 min on the day i made the burgers and the loaf. I used a burger press. The night before was a bit longer to cook the asuki beans and quinoa. Hope you enjoy!

Ingredients

  • 1/2 cup hemp seed
  • 1 1/2 cups cooked asuki beans
  • 12 ounces organic black beans
  • 1/4 cup cooked sweet potato
  • 1 1/2 cups quinoa
  • 1/2 cup corn (frozen or fresh)

Directions

  1. Prepare the asuki beans and the quinoa/corn the night before
  2. When ready to make the burgers: In a large bowl - mix the asuki beans and black beans together
  3. Mash the beans.
  4. then add the quinoa and corn mixture to the beans
  5. At this point, its best to now use your hands to mix the ingredients
  6. Add the cooked, thinly sliced sweet potatos (sweet potato recipe in kind life book)
  7. Add Hemp seed
  8. Keep flour on hand and add accordingly to mixture. You do not want the mixture to be sticky or dry.
  9. When the mixture is ready, roll into small balls for each burger. Then flatten or use a burger press.
  10. Place in oven at 400 degrees for about 10-15min. Keep watch though as oven types/temps vary.
  11. You can put these on the grill as well - but being winter in new england...that is not an option right now.
  12. With the leftover mixture, you can make a vegan loaf. It was yummy and great for leftovers and lunches.
