Simple Cucumber Chickpea Salad

I came up with this recipe while cleaning out my fridge, it's pretty easy to make. I'd recommend serving this salad with some seitan sausages. Vegetarians can even add some creme fraiche.

Ingredients

  • 1/2 cucumber, sliced
  • 1/2 orange or red pepper, diced
  • 1 handful of dried chickpeas
  • 1 herbal salad dressing of your choice

Directions

  1. Let chickpeas soak overnight, cook them the other day for about 90 minutes
  2. While cooking the chickpeas, slice the cucumber and dice the pepper
  3. Put everything together in a bowl and mix well
