This receipe doesn't sound very vegan, but let me tell you, no cowboys or animals are harmed to create this wonderful appetizer! Had this for the first time at one of our Christmakkah Potlucks. Had to get the receipie from our friend. Every time I make it now, it's a hit! For best results make this the night before. Garnish with fresh avocado before serving. I like to use Tostito's scoop chips because they are great for parties. People can fill up the chip scoops with this yummy goodness and not have to worry about getting juice all over their appetizer plate. Cowboy caviar is also great on tofu rancheros, on top of a salad, or just by it's self. Helpful tips: *Do not use regular yellow canned corn, shoe peg corn is required, it is so sweet and yummy, you'll be happy you did! **If you can't find rotel tomatoes, I suggest 2 cans of petite cut diced tomatos with jalepenos. Be sure to still drain, and add juice from 1/2 a lime. If two can's w/jalepeno's is too spicy, use one with and one without, just make sure they are petite diced cut, or else they will be too chunky.
