Lemon Kale Salad - my first time with Kale!

Simple & super easy Kale salad, full of flavour and delicious! The flavours are massaged into the Kale and it softens beautifully. If you like lemon and a hint of heat, this salad is for you. Also a great introduction to Kale- I bought my first bunch of organic Kale from the Farmer's Market and it sat in the fridge for days before I was brave enough to use it!

Ingredients

  • 1/2 Lemon
  • 1/2 teaspoon Cayene Pepper
  • 1 pinch Sea Salt Flakes (iodised)
  • 1 tablespoon Olive Oil
  • 1 Bunch of Kale

Directions

  1. Rinse your bunch of raw kale and strip the leaves, discarding all white stalks.
  2. Drizzle the lemon juice and olive oil over the kale, add the cayene pepper and sea salt (salt flakes are best as this helps to tenderise the Kale leaves.)
  3. Massage the ingridients into the Kale for a few minutes until the leaves have softened and absorbed some of the oil.
  4. Chop the Kale into smaller strips & serve with some grated lemon zest.

    Thank you Thank you Thank you! I just served this alongside some "Boiled Yucca with Mojo Sauce". It was delicious! I am such a happy girl right now. And my mom even liked it; and normally she does not really like raw kale. But this just softened it up just right and the lemon zesty flavor was still calm enough to blend well with the olive oil and cayenne.. Everything was great. Thank you! x
