Banana Walnut Pancakes

I found this great recipe at the German Peta Website. These pancakes are so yummie, I had to share them with you!

Ingredients

  • 150 g whole wheat flour
  • 220 ml soy milk
  • 1 banana
  • 2 teaspoons baking powder
  • 1 pinch of salt
  • 50 g walnuts, chopped

Directions

  1. Put incredients into a medium sized bowl in the order given
  2. Mix well
  3. Heat some oil in a medium sized pan
  4. Put a scoop full of batter into the pan and bake until the one side is brown
  5. Turn around and bake until the other side is brown as well

    20 min.

    6 serv.

    For those who don't use the metric system for measuring in the kitchen, these are the conversions:

    150g whole wheat flour = 1.25 cups
    220 ml soy milk = 3/4 cups + 3 Tbsp
    50g walnuts, chopped = 0.43 cup chopped

    added a bit of sorghum flour to the gluten free flour.
    Also added a touch of ground flax seeds.

    Have you tried this with gluten free flour? Interested in knowing if still sticks together like a batter.
