Mediterarean Raw Crunch Salad

I originally picked up this recipe from Whole Foods at one of their displays...but I have tweaked it to improve the taste over the last few months. This is an awesome, simple, raw salad that is just delicious as a meal, snack or side dish. It only takes about 30 minutes to prep and I make a big container of it every few weeks and munch on it over a few days.

Ingredients

  • 24 ounces chick peas
  • 2 cups chopped raw kale
  • 3/4 cup chopped red onion
  • 2 cups halved cherry tomatoes
  • 1 cup chopped kalamata olives
  • 1/4 cup chopped mustard micro greens
  • 1 cup chopped broccoli florets
  • 1/2 diced red, yellow or orange bell pepper
  • 2 tablespoons red wine vinegar
  • 1 pinch cayenne pepper

Directions

  1. You can't mess this up. Just chop or dice everything up and put it all in a big tuperware or sealable bowl.
  2. Add the red wine vinegar to taste (I like a little extra)
  3. Salt and Pepper to taste
  4. The cayenne gives it a nice flavor - add to taste
  5. Let this sit in the fridge at least an hour...stir well for flavors to blend.
  6. This dish stays fresh for 4 or 5 days and is delicious
