Vegetarian and Vegan Cornbread Stuffing

I found a cornbread stuffing recipe that seem far better than the "Wild Rice Cornbread Stuffing" whom I probably wouldn't like, it could be good in "Rachel's Tofu Roulade". The number of servings the recipe give was not provided.

Ingredients

  • 1 Onion, Diced
  • 3 Stalks celery, diced
  • 1/2 tablespoon Sesame Oil
  • 1/2 teaspoon Sage
  • 1/2 teaspoon Thyme
  • 1 teaspoon Parsley
  • 1 Salt to taste
  • 1 Pepper to taste
  • 2 cups Whole wheat bread, cubed
  • 2 cups Corn bread, cubed
  • 1/2 cup Vege3table broth

Directions

  1. Pre-heat oven to 400 degrees
  2. Sautee the onion and celery in the sesame oil.
  3. In a large mixing bowl, combine the spices with the bread and vegan cornbread, mixing well. Add the onion and celery and stir to combine.
  4. Add vegetable broth just until moistened, adding more or less as needed.
  5. Bake for 20 minutes.
