Bean Salad

This is a very easily prepared and adaptable recipe, you can change any of the ingredients based on your diet or add a few more...it's yummy and filling...you can eat it alone, on chips or crackers, over rice, warm or cold...it's awesome!

Ingredients

  • 15 ounces pinto beans
  • 15 ounces kidney beans
  • 15 ounces chick peas
  • 30 ounces black beans
  • 2 cups frozen corn
  • 1 cup olives, chopped
  • 1/2 cup green onions, chopped
  • 1 cup italian style dressing
  • 1 hot pepper, finely chopped

Directions

  1. Rinse and drain all beans.
  2. Place all ingredients in a large bowl.
  3. Stir well.
  4. Refridgerate for a few hours until flavors are blended.
  5. At this point taste and add anything you like (chopped bell peppers, cilantro, basil, avocado, whatever you like.)
