Sweet & Fire Popcorn

If there was ever anything I loved to do with my mom, it was watch Breakfast at Tiffany's and eat popcorn. But not that really gross, and very bad for you, bagged microwave popcorn. I'm talking about the popcorn where you buy the kernals and pop them over the stove. We loved just taking different spices, herbs, seasonings, etc and trying to find the best flavor. My mom did it with her mom when she was younger, too. My mom was a firm believer in the cheesy popcorn. I on the other hand, was not. I got this idea one day to have popcorn that was a mixture of hot and sweet - which I love. What is so great about this stuff is that it's such a big mash up of flavors. Some will taste like cinnamon, others sweet, some peppery. I dubbed it, Sweet&Fire. You can add more or less cinnamon and red pepper flakes to your liking.

Ingredients

  • 1/4 cup Earth Balance Butter
  • 1 tablespoon Coconut Oil
  • 4 tablespoons Coconut Palm Sugar (or sugar of your choice)
  • 1 teaspoon Fine Sea Salt
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Dried Red Pepper Flakes
  • 1/2 cup Corn Kernals

Directions

  1. In a pot, melt butter over medium/low heat.
  2. Once melted - stir in oil, sugar, and corn kernels, and coat the kernels.
  3. Cover with a lid and pop the popcorn.
  4. Once popped, remove the popcorn immediately from the heat, throw in the remaining ingredients and toss. My mom and I would actually put the popcorn and the ingredients into a paper bag and shake it. We believe it mixes better that way, but that's not exactly eco-friendly. A large salad bowl would do great, though.
  5. Let the popcorn cool and then eat.
