Creamy Garlicky Caesar Salad Dressing

This recipe is a variation on a recipe I used to use.. now it's vegan and really delicious! You would never guess that it was vegan. I think I might try it out on some friends at our next BBQ. Homemade Vegan Parmesan - 1/2 C roasted unsalted walnuts - 1/4 C roasted unsalted cashews - 1/2 tsp garlic powder - 1/2 tsp onion powder - 1/2 tsp ground dry mustard Throw everything into a food processor and pulse until it reaches the consistency of course salt or regular grated Parmesan. Use on top of your salad as well as in the dressing if you like! It really gives the dressing the consistency of real Parmesan.

Ingredients

  • 1/3 cup Vegenaise (I had the grapeseed one)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons red wine vinegar
  • 2 teaspoons vegan Worcestershire sauce
  • 1 -2 minced garlic cloves
  • 1 teaspoon Fresh ground pepper (or to taste)
  • 1 teaspoon *Optional anchovy paste (do not add paste for vegan version)
  • 1 tablespoon vegan Parmesan (recipe below for a quick homemade one!)

Directions

  1. Mince the garlic and put in a mixing bowl or shaker.
  2. Stir in the lemon and red wine vinegar, let sit for a few minutes while you prep everything else. Letting the garlic sit in the acids help take a bit of the
  3. While the garlic is steeping, you can either make your Parmesan below and/or measure out the rest of your ingredients. Throw the remainder of the ingredients in and mix/shake it all up.
  4. Toss dressing in a large bowl with freshly washed organic romaine lettuce, homemade croutons and serve with a lemon wedge.
  5. Enjoy!
