Delicious Broccoli Soup!

Delicious and extremely heathy! I have been making this and feeding it to my mum who is very unwell as it is jam packed with nutrients! its so easy to make too!! It freezes really well for lunch throughout the week!

Ingredients

  • 1 Onion sliced
  • 2 teaspoons minced garlic
  • 4 cups vegetable stock
  • 1 tablespoon olive oil (or any other type of oil)
  • 1/2 cup rice/soy or what ever milk takes your fancy
  • 2 heads of broccoli chopped including stems
  • 3 sticks of celery chopped

Directions

  1. 1. Slice onion thinly and chop celery and broccoli into inch size pieces.
  2. Heat oil on high in a large saucepan.
  3. Saute onion and garlic until the onion is soft
  4. Chuck in the celery and cook until just softened (stir a bit during this time to stop the stuff on the bottom burning). This should be about 3 or 4 minutes.
  5. Add chopped broccoli and vegetable stock and bring to the boil.
  6. Reduce heat and simmer for 15 minutes or until broccoli is soft.
  7. Take soup off the heat and blend until all ingredients are the same consistency. I blend the shop using a stick blender however you can use a normal blender - what ever works!
  8. Add as much milk to your bowl or to the pot as you desire. I add about half a cup (to the pot) but lets face it - im terrible at measuring
  9. Enjoy!
