Mochi Adzuki Bean Cheese Burger

Delicious, healthy and full of flavor! I made this up from stuff I had on hand and it came out so good I had to share.

Ingredients

  • 1 Sesame Garlic Mochi
  • 1 tablespoon Follow Your Heart Horseradish Sauce
  • 1/4 cup arugula
  • 1 tablespoon jalepeno marinade
  • 2 teaspoons Vegan Parmesan, Chipotle Cayenne flavor
  • 1 ounce Daiya Cheese, Jack flavor
  • 1 Adzuki Bean Burger

Directions

  1. - cook adzuki bean burger based on instructions (can use any vegan burger of course)
  2. - cut a 1 inch strip off of the mochi, then cut in half to make 2 "buns"
  3. - Grill the mochi on a panini press until crispy and smashed down
  4. - Meanwhile, mix the jalepeno marinade, parmesan and arugula together. (I got the marinade from a local vendor at a farmer's market, so this might be hard to come by, but you can leave it out, or mix with some sort of vinegrette you like)
  5. - smear horseradish sauce on each bun
  6. - on bottom bun, layer jack cheese, arugula, burger, more cheese, top with bun
  7. ENJOY~
