Classic white cake/ cupcakes

Ingredients

  • 3 cups Sifted cake flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Sea salt
  • 1 1/2 cups Smart balance (butter substitute)
  • 2 1/4 cups Sugar
  • 1/2 teaspoon Vanilla
  • 1 cup Soy milk

Directions

  1. Preheat oven to 350
  2. Grease & flour 2 9x9 cake pans or line cupcake pan
  3. In medium bowl, combine flour, salt, baking powder.
  4. In large mixing bowl, beat butter with sugar until creamed together. Add in vanilla, mix to combine.
  5. Add in parts, start with flour mixture: flour then mix, milk then mix, repeat until all combined.
  6. Pour into prepared pans or cupcake liners.
  7. Bake for 30 minutes, rotate half way through cooking.
  8. Cool in pan on rack. Yum yum. Top with favorite frosting (try my soy cream cheese frosting) and enjoy!
