"Massaged" Kale

An easy and delicious side of greens for any meal!

Ingredients

  • 2 cups kale
  • 1 teaspoon olive oil
  • 1 pinch salt

Directions

  1. Wash and dry a handful of kale leaves. Remove the tough, center rib of each leaf with a sharp knife.
  2. Roll up each piece of kale and slice into long, thin ribbons. Place in bowl.
  3. Add olive oil and massage the oil into the ribbons of kale for 3 minutes. This step is important to soften the kale for eating.
  4. Add a pinch or two of salt and toss to combine. Serve at room temperature.

    This was WONDERFUL!! I actually just seconds ago imagined myself rolling around in a bed of this.. Its delicious, fresh, zesty but with the calm you want in all your night time salads.I would give this an academy award if I could. Thank you Merci Beaucoup xxx ( My mom even loved it, I served it alongside a boiled Yucca with Mojo Sauce -- I'm happy )

    This sounds delicious! I am a new vegan and I notice the more raw fresh fruits and veggies I eat, along with my cooked grains and tofu /soy products, the healthier and better I feel. I will try this 'massaged kale' recipe and tell you how I like it. ( And most likely, I will love it since I love kale and love olive oil ) Thank you for sharing your recipe.
