Vegan Fudge (Chocolate)

Easy (Vegan) Fudge When I was a kid, my mother used to buy 4-minute Fudge -- it was in a box from McCain or Sherriff, I do not remember, but it was discontinued about 25 years ago. It had a little plastic cooling tray and a Packet of mixture that you just heated up with milk and poured in the tray. We waited and waited for it to harden and then devoured it. Thinking back to that years ago, I wondered if I could recreate the fudge with the hitch that, it needed to be made with vegan ingredients or it was a no-go. I found some on the internet and began to make it every now and then. YUMMY

Ingredients

  • 6 tablespoons vegan margarine
  • 3 1/2 cups confectioners' sugar
  • 1/2 cup sifted cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 cup soy milk (or rice, almond)

Directions

  1. Lightly grease a 5x9-inch loaf pan using a little of the margarine(or an ultra-thin candy mold plastic tray best).
  2. Place the remaining margarine, sugar, cocoa, vanilla and soy milk in a heatproof mixing bowl or the upper part of a double boiler (We hold a small pot in a large pot of water).
  3. Place the bowl or boiler over simmering water and keep stirring until smooth.
  4. Pour the mixture quickly into the prepared pan. Chill thoroughly and cut into squares.
  5. P.S. after pouring into tray, use spoon to scrape the pot for a delicious warm spoonful of unhardened fudge !!

    I made this for everyone at Christmas, and they loved it. I added almond or cherry extract at the end on a few batches and they turned out great!

    Could this be made with stevia, or 1/2 stevia and 1/2 sugar, just to cut down on the refined sugar and calories? This sounds great and I am gonna try it.

    Hi @Ltaylor101, Hershey's would be fine. The beauty of it (other than taste lol) is the ingredients are simple and basic, which does leave room for vegan alterations, diff choc types etc. Hope it's great for ya!!

    Have you tried the recipe with dark chocolate powder? Would that be weird? I never make fudge but I love the dark stuff!

    I'm sure it will last a week or more in the fridge -- honestly ours is gone in a day and a half. It can be sticky sometimes, I've never dusted with sugar or anything though so I cannot help you there. But once it is set hard and cold, it is usually okay.

    How long will this keep for? I want to give home made gifts for Christmas this year and this looks great. Also, once set is it sticky? Should I dust it in sugar or cocoa before packaging? Thanks!!

    Glad to hear it Laura and You're Welcome. If something isn't vegan I gave it up for good years and years ago...BUT, when I CAN have choc fudge again like this, it's nice!!

    Unfortunately no Blare. It is very sweet; I've told people with diabetes that it is mostly sugar so they know how to deal with it. Sorry :(
