Vegan Salsa con Queso/Chili Cheese

One of my favorite cheese dips is salsa con queso. I've pretty much perfected (for myself at least) a salsa con queso that I could have for any occasion. I had it out at my graduation party and it was a hit (not to toot my own horn, toot toot). Everyone couldn't believe it was vegan, but it was. The taste of it is incredibly cheesy, but the salsa I use gives it this hint of chili almost. So it tastes a little like chili cheese. So it's perfect for veggie dogs or chili cheese fries. You can add as much salsa as you want, or none at all if you want to make just cheese dip. That's cool too. If you want to be a little crazy, add in a tablespoon of jalapeno juice to spice it up or just add the jalapenos into it. Or use any other kind of chili peppers. You could also mix in veggie burger crumbles, black olives, or veggie bits. You could also dip mini bagels into it (we did that at my graduation party) or actual vegetables. Options are endless. Go nuts.

Ingredients

  • 2 cups water
  • 1/4 cup raw cashews
  • 4 ounces drained pimentos (you can get a 4oz jar at grocery stores normally)
  • 1 cup nutrional yeast
  • 2 tablespoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 1/2 teaspoons sea salt
  • 1/2 teaspoon onion powder
  • 1/2 minced garlic clove (or 1/4 teaspoon garlic powder)
  • 1/4 teaspoon cumin
  • 1 pinch cayenne pepper
  • 2 tablespoons Newman's Own Black Bean & Corn Salsa (or salsa of your choice)

Directions

  1. Combine all the ingredients (except the salsa) into a blender and blend til smooth (about 2 minutes)
  2. Pour mixture into a sauce pan and whisk constantly (if you don't it will start to stick to the bottom of the pan) over medium heat until it's thick (about 5 to 6 minutes)
  3. Move the cheese into a dish that you'll be serving in, or into a container and mix in the salsa. Serve with chips

    Woohoo! I'm glad you liked it. It's so simple, but so good. My biggest pitfall with going vegan was always cheese. Everything else I gave up with no problems. Cheese, no so much. Creating things like this have helped out tremendously.

    I love this recipe! So good!!! I tried it for a housewarming party (and my boyfriend and I were the only vegans) and everyone loved it!
