Nachos, Vegan-style

If there is one thing I cannot get enough of, it is nachos. When I became a vegan, I had to figure out a way to "vegan-ize" (is this a word) my favorite snack. When I am making nachos for myself, I only make one layer (as depicted in the photo). If I am making them for a group of people, I will add layers of nachos, building a nice mound, and will serve the nachos with a side of vegan sour cream and fresh guacamole. However, at the time I made this recipe I did not think to photograph the Sour Cream and the Gauc. Oh well...

Ingredients

  • 1 Bag of Mexican-style vegan *cheese* (I like Galaxy Foods or Daiya)
  • 1 Jar of Mrs. Renfro's Habañero Salsa (if you can stand spicy, I highly recommend habañero salsa)
  • 1 bag of Tortilla strips (or tortilla chips of your liking)
  • 1 Jar of sliced Jalapeños or freshly sliced.
  • 1 cup Vegan Sour Cream (for dipping)
  • 1 cup Fresh Guacamole (for dipping)
  • 1 tablespoon Fresh Chopped Cilantro for Garnish
  • 1 Optional Ingredient: Fresh Chopped Scallions or Onions (if you like this sort of thing)
  • 1 Sheet Pan
  • 1 Tin Foil

Directions

  1. Cover a sheet pan with tin foil or silpat
  2. Spread a nice layer of Tortilla Strips
  3. Generously drizzle habañero salsa all over the tortilla strips
  4. Add a nice layer of Galaxy Foods Mexican *cheese* or Daiya Cheddar *cheese)
  5. If you are making nachos for more than one person, I recommend building layers into a mound
  6. Add sliced jalapeños (as much as you like)
  7. Bake in a pre-heated 375 degree oven until cheese is melted.
  8. Once cheese is melted, remove from oven, garnish with chopped fresh Cilantro and served with a side of vegan sour cream and fresh guacamole. YUM!

    Toffutti Better Than Sour Cream is listed as Non Hydrogenated on their site.

    Hi Jennifer,

    I've noticed that Whole Foods sells Tofutti and another brand of sour cream but I forget the name. That said, I couldn't say if that brand contains hydrogenated oils as well. Sorry.

    I'm just starting the vegan thing and was looking for non dairy sour cream. Tofutti's has hydrogenated oils. (as does the cream cheese). Do you know of a better brand/option?
