Thai sweet potato pudding

This dish is heaven on a spoon and so easy to make. When I want to give myself a big hug...this dish is always on the menu.

Ingredients

  • 2 sweet potatoes (wrapped and baked in oven for 45 minutes at 350 degrees)
  • 1 cup thick coconut cream
  • 1/4 cup maple syrup
  • 1/2 cup egg substitue (the equivalent of 2 eggs..I use applesauce 1/4 c. per egg)
  • 2 teaspoons pumpkin pie spice

Directions

  1. After sweet potatoes have cooled down, peel and place all remaining ingredients into a blender and puree until smooth.
  2. Place mixture into four greased ramekins. Place on a baking sheet and cook until firm to touch, about 20 minutes at 350 degrees.
