Hummus & Zucchini Soup

This soup is so creamy and delicious. You would never think that hummus and zucchini could make such a wonderful pair.

Ingredients

  • 3 tablespoons olive oil
  • 1 small onion, sliced
  • 3 medium zucchini, sliced
  • 4 cups vegetable stock
  • 10 ounces hummus (purchased or homemade..I use plain)

Directions

  1. Heat the olive oil in a large soup pot over medium heat,
  2. Add the onion and zucchini slices, cover and cook, stirring occasionally, for about 5 minutes until softened.
  3. Add stock and lightly season with salt and pepper. Remember the hummus will give some flavor later.
  4. Simmer gently for about 30 minutes. Remove from heat and cool slightly, then puree soup mixture in a food processor.
  5. Add hummus to mixture and continue puree until smooth. Check for seasoning, serve and enjoy!
