Super simple steps to make a completely sugar free dessert. My hubby says they taste like Almond Joy candies. Feel free to expirement with the add-ins. This could be super fun with the kids letting them choose the add-ins, but I have to say that I loved the Goji berries.

Ingredients

  • 1 cup Coconut Oil, Raw Organic
  • 2 tablespoons Cocoa Powder, Unsweetened
  • 1 tablespoon Pure Vanilla, Organic - No Alcohol
  • 1 1/2 cups Coconut, Finely Shredded
  • 1/2 cup Goji Berries, Organic

Directions

  1. Melt coconut oil in a pan over medium heat (I like to use stainless steel, glass or cast iron).
  2. Add the remaining ingredients (except the goji berries) and stir together.
  3. Fill the mini cupcake tins, one tablespoon at a time.
  4. Top with the goji berries. I liked to put them in the center, like the shape of flower petals.
  5. Place in the freezer for 2 or more hours so they can take shape. *If you can wait that long to enjoy them. :)
  6. Enjoy! And try not to eat most of them at once. They are pretty tasty.
