Easy Vegan Spelt Bread

This bread is, as the name says, easy (my kinda bread). I also like that it does not use traditional flour. The spelt flour gives it a great taste!

Ingredients

  • 3 cups spelt flour
  • 1/4 cup raw sugar or brown sugar
  • 1/2 tablespoon fine sea salt
  • 3 teaspoons dry yeast
  • 1 3/4 cups warm water
  • 1 handful of seeds (flax, sesame, sunflower)

Directions

  1. Mix all of the ingredients dry ingredients together, including the seeds (if desired).
  2. Stir everything until well mixed, then add the water and keep mixing until the batter is thick and moist.
  3. Pour into a greased bread pan (I used shortening). Smooth out the top of the batter and sprinkle on some more seeds if you like.
  4. Cover the pan with greased plastic wrap and place a tea-towel on top. Place on top of the oven where it will be warm.
  5. Heat the oven to 375 and let the dough rise until it has doubled in size (about 20-30 min.).
  6. Remove plastic wrap and bake for 45 minutes or until a toothpick inserted in the center comes out clean.
  7. Remove from pan and let it cool before slicing.
  8. Serve and enjoy!

    Hi Molly! Well, without knowing why you are staying away from sugar, I would say Splenda for baking or Stevia/Truvia would work well. Or if you are wanting to go more natural, you can use agave or maple syrup, but you will use 2/3 of cup for these for every cup of sugar a recipe calls for and you also have to reduce all the oter liquids by 1/4 cup. Please note that I have not ever tried to do this, but I have used maple syrup in other recipes with success. Hope this is the info you needed. :)
