Pak Choi (or Bok Choy) Stir-Fry with Seitan

This super quick-and-easy stir fry uses seitan and Asian flavors to help turn a leafy green into a delicious meal!

Ingredients

  • 2 tablespoons peanut oil
  • 1 small onion, minced
  • 1/2 teaspoon rice vinegar
  • 3 teaspoons soy sauce
  • 1 teaspoon sesame oil
  • 8 ounces seitan
  • 1 tablespoon white cooking wine
  • 1 bunch of pak choi (baby bok choy), thinly sliced

Directions

  1. Separate pak choi leaves from the stalks.
  2. Heat peanut oil over medium-high heat.
  3. Sauté the onion for a minute or so, until fragrant.
  4. Add the stalk of the pak choi, 1/2 tsp rice vinegar, 1 tsp soy sauce and 1 tsp sesame oil.
  5. Sauté another 3 minutes or so, then add the seitan and raise the heat to get a good sear.
  6. Add another teaspoon of soy sauce and sauté the seitan for 3 minutes on each side, until beginning to brown.
  7. Add the leafy part of the pak choi and the remainder of the soy sauce.
  8. Reduce the heat to low, and cover until your greens are just beginning to wilt and soften.
  9. Turn off the heat, stir and eat!
