Seitan in a Balsamic-Wine Reduction

A quick and easy seitan dinner option with delicious results!

Ingredients

  • 8 ounces seitan, cut into small slices (about 1/4" thick)
  • 1/4 cup red wine
  • 1/4 cup balsamic vinegar
  • 1/8 teaspoon fresh thyme (optional)
  • 1/8 teaspoon dried rosemary
  • 1/8 teaspoon dried thyme
  • 1 pinch freshly ground pepper and salt, to taste

Directions

  1. Place the red wine and balsamic vinegar in a medium-size saute pan or sauce and heat them slowly.
  2. Raise the temperature to medium, add the seitan and herbs, and cover. (The sauce should be bubbling steadily.)
  3. Cook the seitan for about four minutes on each side, it should begin to brown lightly.
