Powerhouse Tempeh Tacos

Becoming vegan meant I had to give up my much loved ground beef tacos. Now I make them with tempeh which makes me so happy. They are loaded with flavor and protein which makes them a perfect meal in my book. Check out my blog for more vegan recipes. http://papastoolshedmamaskitchen.blogspot.com/

Ingredients

  • 1 package tempeh
  • 1 can black beans
  • 1/2 package taco seasoning
  • 1 carton vegetable stock
  • 1 package hard taco shells
  • 1 tomato
  • 1 avocado
  • 2 cups shredded lettuce
  • 1/2 can black olives
  • 1 tablespoon olive or canola oil

Directions

  1. Finely dice tempeh
  2. Add olive oil to a pan that is at medium heat. Add tempeh. Fry for about five minutes to brown it up a bit
  3. Cover tempeh slightly with veggie stock and as much taco seasoning as desired. Cover and let simmer for 20 minutes. Add more stock as needed but by the end of cooktime, all the stock should be dried out.
  4. Throw in drained black beans and a touch more oil until beans are warm.
  5. Scoop into shells and add your favorite toppings!

    Hey! Tempeh is used as a red meat substitute in vegan cooking. However, it is not a processed food. It's made with fermented whole grains so it is considered plant based. I love it!

    Thanks for posting this! I love tacos as well and I just started my vegan journey and was searching for a great recipe for tacos. I've never had Tempeh, is it just a protein packed meat substitute?
