Cheesy Kale and Asparagus Scramble

A delicious tofu scramble with alkalising green vegetables and a cheesy taste.

Ingredients

  • 2 tablespoons coconut oil
  • 1 small onion
  • 3 cloves of garlic
  • 2 cups Asparagus
  • 2 cups diced mushrooms
  • 2 cups Kale
  • 2 cups Firm Tofu
  • 1 dash Apple Cyder Vinegar
  • 4 tablespoons Nutritional Yeast

Directions

  1. Melt coconut oil in a large frying pan
  2. Chop onion and garlic, add tp pan and fry for a few minutes on a low/medium heat
  3. Chop all the other vegetables and then chuck into the pan
  4. Add salt and pepper to taste and a generous splash of apple cyder vinegar
  5. Crumble the tofu into the pan using fingers
  6. Turn up the heat on the pan a bit
  7. Add in the nutritional yeast and mix in - fry for a another few minutes and then serve
