Curry dal with sweet potato

This is my own vegan recipe. I usually make this one day ahead as it tastes best the next day!

Ingredients

  • 1 tablespoon cumin powder
  • 1 tablespoon tumeric
  • 1 tablespoon cumin seeds
  • 1 pinch salt
  • 1 pinch chilli powder
  • 1 ounce sweet potato
  • 4 cups lentils
  • 1 ounce fenugreek leaves
  • 1 cup vegtable stock
  • 1 cup tomato soup in can
  • 3 shallots
  • 1 tablespoon ginger
  • 5 cloves of garlic

Directions

  1. clean and cube sweet potato and put in a microwave safe bowl with enough water to cover top and set microwave on high to cook for 20 minutes
  2. add a tablespoon of olive oil to a pan and fry the onion and garlic until soft
  3. next add all spices and ginger to the pan and cook on low until thick paste forms
  4. add the vegtable stock, tomato soup, and lentils
  5. let this simmer for about 15 minutes
  6. add sweet potato and fenugreek then simmer for an additional 5 minutes
  7. Note: If you don't have fenugreek you can subsitute with fresh spinach
  8. Serve with basmati rice
