Stuffed Kale Tacos with Vegetable 'meat'

I just made this the other night, and I loved it! My mother who is not a vegan yet nor raw, loved the flavor of my " raw veggie taco stuffing".

Ingredients

  • 6 medium sized Kale leaves ( should look like little boats or a shell. If its really big you can wrap the raw veggie "meat" inside like a burrito !)
  • 1 cup fresh chopped kale
  • 1/2 cup fresh chopped spinach
  • 1/3 cup chopped red onion
  • 1/3 cup fresh chopped sweet red bell pepper
  • 1/2 cup chopped cucumber
  • 7 grape tomatoes/ cherry tomatoes * for veggie meat stuffing*
  • 3 little almonds * for veggie meat stuffing*
  • 4 little cashews * for veggie meat stuffing*
  • 2 macadamia nuts * for veggie meat stuffing*
  • 1 tablespoon olive oil ( appx.) * for veggie meat stuffing*
  • 1 teaspoon salt
  • 1 teaspoon cayenne
  • 1 teaspoon paprika (appx.)
  • 1 pinch black pepper
  • 1/2 of an avocado sliced for topping

Directions

  1. Wash and set aside the Kale leaves used for the "taco shells".
  2. Put the other washed and chopped servings of fresh kale, fresh spinach, red onion, sweet red bell pepper, and chopped cucumber in a mixing bowl. Drizzle a bit of the serving of olive oil in, just a bit, and massage through with your fingers.
  3. On a chopping board, slice and cut the 3 almonds, 4 cashews, and 2 macadamia nuts and slide over to make room to chop the tomatoes. Keep it on the board, however.
  4. Take a few of the tomatoes and chop them on the board, to let the juices spill out. Then slide the chopped nuts over and mix them in the juice with the tomatoes.
  5. Put that in a separate little bowl, chop the rest of the tomatoes , throw them in and the salt , olive oil, cayenne, paprika, and black pepper in. Mix that up fully and throw the "veggie meat mix " in with the spinach and kale. Mix thoroughly.
  6. Taste. Add any extra seasonings if needed. And then stuff the Kale taco shells with this mixture.
  7. Top off each taco with a slice or two of avocado. And enjoy!
