Girl Scout Cookie Re-Do: Thin Mint Brownie Balls

It’s chocolate time! Mint chocolate time! Raw brownie batter coated in smooth milk chocolate. Enjoy these when those Girl Scouts at the grocery store just won't leave you and your cravings alone. Ingredients

  • 1/2 cup walnuts
  • 3/4 cup pitted and packed dates
  • 1 tablespoon cocoa powder
  • 1/2 cup non-dairy chocolate chips
  • 1/4 teaspoon mint extract
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon salt

Directions

  1. Combine walnuts, dates, cocoa powder, mint and vanilla extracts in the bowl of a food processor.
  2. Combine until very crumbly.
  3. Add 1/4 cup chocolate chips and a pinch of salt.
  4. Pulse together a few times to combine. Taste. You can add more cocoa powder, if desired.
  5. Roll into balls. Set in the fridge until firm, about 30 minutes.
  6. When finished, combine 1/4 cup chocolate chips and 1 tsp. neutral oil in a microwave safe bowl.
  7. Heat until melted, about 1 minute. Stir together until creamy.
  8. Lightly dip the top of each ball into chocolate and place onto a piece of parchment paper. Place back in the fridge until hard.
  9. Eat! Store leftovers in the fridge
