Crispy Peanut Butter Treats With Chocolate Chips

Here is one of my favorite dessert bar recipes, from my book (p. 184).

Ingredients

  • 1 box brown rice crisps cereal
  • 1 3/4 cups brown rice syrup
  • 1 pinch of fine sea salt
  • 3/4 cup Earth Balance® Peanut Butter
  • 1/2 cup grain-sweetened, nondairy chocolate or carob chips

Directions

  1. Pour the rice cereal into a large bowl.
  2. Heat the syrup with a pinch of salt in a saucepan over low heat.
  3. When the rice syrup liquefies, add the peanut butter and stir until well combined.
  4. Pour over the rice cereal and mix well with a wooden spoon.
  5. Once thoroughly mixed and cooled to room temperature, stir in the chocolate chips.
  6. Make sure the mixture is cool, or you will end up with melted chocolate instead of chocolate chips in your treats.
  7. Turn the mixture into an 8"x8" or 9"x13" baking dish.
  8. Wet your wooden spoon lightly and press the mixture evenly into the pan.
  9. Let cool for 1 hour - if you can - before cutting into squares or bars.

    I made this for a dinner party this past Sunday and everyone loved them:) Especially the boys!!! One guy told me that he had been on some kind of diet or cleanse recently, but he broke it for these treats because he couldn't resist. I told him they were vegan and he was really happy to hear it- he couldn't believe it! He asked me for the recipe so I gave it to him. They really had that marshmallow gooey-ness of regular rice crispies treat, I was so surprised!

    How much would you say is "one box" of brown rice crisps? Also...what are they? haha (like rice krispies?)

    I have never tried these with the chocolate chips, they are fantastic! I am addicted to them. I have one (or 2) for a meal with some veggies and greens 1-2 times a week. They have saved my life at many social occasions where there was nothing to eat. I carry a few with me as a just in case.

    I made some of these for a potluck, because I wanted I dessert I could eat. Everyone went nuts over them! 3 people asked for the recipe. They frigging rock!

    I also FINALLY made these and YUM!! One of my favorites so far, I did add a little extra peanut butter :)
    I also love how I don't get a tummy ache after eating these like I do when I have the "old-school" ones my mother-in-law makes.

    This so far is my favorite dessert I have made from the book. I've tried it exactly as written and I have tried with less of the brown rice syrup. Both ways are good. So glad you came up with it!

    Can someone help me with this? I made this recipe recently but had an economy sized bag of cereal so calculated the amount that I thought would be in a box (284 grams). HOWEVER, I made only half the recipe and it still filled up an 8x8 pan, as suggested in the instructions.. I'm so confused! Did I use too much cereal?

    Those of you who've tried the recipe, what size box of cereal did you use? Thanks!!

    I just made this recipe yesterday (sans choc.chips), and brought some into work. I work with families who often don't have enough education in nutrition to feed their children properly. I just shared these with two little girls who are used to a potato chip/soda diet...and they loved them! Granted they are a dessert-but are amazing...if non vegan two year -olds love them, they have to be good! My non vegan co worker loved them as well! I like how the brown rice syrup doesn't give me that nasty sugar rush feeling and I love the taste of it too! So good on Mochi with Tahini! Thanks Alicia for your creative amazing recipes!

    My husband and I made some modifications because we didn't have crispy brown rice cereal at our local market. We used Envirokids Peanut Butter Panda Puffs with Puffins Peanut Butter cereal the first time. We were eating them before they cooled. The next batch we mixed Envirokids Panda Puffs, Koala Krisp and Brown Rice Crispy Cereal with Teddy Crunchy Pnut butter with flax. They are outstanding!!

    I recently made these delicious treats! I have a nut allergy though, so I swapped out peanut butter for soy "nut" butter. The chocolate chips I used were Enjoy Life's non-dairy ones. They avoid 8 of the major allergns out there, and are vegan as well.

    These were even better then I thought they would be! Who knew something so simple and easy to make, could be so yummy!? Definitely my new obsession!

    I made these the other day and honestly, was SHOCKED at how gooey they were. They held together with the same texture as a traditional rice crispy but without all the processed ingredients. I've been vegan for 29 days and have been blogging about my progress. I'm really inspired to try more of your recipes after the success of the rice crispy treats, so thank you! Oh and my husband and other non-vegan friends also thought these were A-MAZING!!!! Thanks for helping to get some of my family to realize vegan doesn't mean not-tasty. :)

    I used cashew butter instead of peanut butter & added a little unsweetened coconut too. Delicious!! Definitely a new favorite!!

    I made some yesterday, I added a two teaspoons of agar agar to help bind the syrup and PB and put them in cupcake tins..SO GOOD!
