Prep Time: 5 minutes | Cook Time: 35 minutes | Yields: 4 servings
Ingredients
1 package prepared seitan
1yellow onion
1 beefsteak tomato
2 leaves of lettuce (romaine or butterhead)
2 whole wheat pitas
4 tbsp veganaise
BBQ sauce, we like Annie’s 4 cup
2 tbsp olive oil
Directions
Dice the onions and cut the tomatoes into ½ inch slices
Sauté onions in olive oil over medium heat until soft, about 3-5 minutes
Add seitan and cook until just barely golden brown, about 3-5 minutes, stirring frequently
Add barbeque sauce, and stir well
Reduce heat and allow to simmer until sauce has cooked down, about 15-25 more minutes
Remove the mixture from the heat and let cool for one minute
Cut each pita in half and spread veganaise on the inside of the pitas
Place the lettuce and tomatoes inside the pitas before spooning in the seitan
Serve and enjoy!
